Mulit-grain muffins - high in all that good fat

Multi Grain Muffins

1 ½ C boiling water
2 C All Bran cereal

In a medium bowl, put All Bran cereal and pour the boiling water over and cover. After a few minutes add:

2 C wheat bran
4 T flax meal ground – found at Cornucopia or Fred Meyer in the fridge next to the eggs in the health section
4 T granulated lecithin (found at Cornucopia or probably even at Fred Meyer’s health section – It’s yellow & granular)
4T toasted wheat germ – found in the Fred Meyer’s health section next to the bulk

In a larger bowl beat for 2 minutes:
A little more than 1 C of brown sugar (or I use cane sugar) and ½ C olive oil

Add 2 C buttermilk and 2 tsp of vanilla and beat for 1 minute more
Scrape bowl.
Add 3 C whole wheat flour, ½ C oat bran cereal, 2 ½ tsp baking soda, 1 tsp Baking powder, and ½ tsp salt. Beat for 2 to 3 minutes on medium speed. Add ¼ C of water if too dry.

Pour the medium bowl contents into the larger bowls and mix it up good.
You can add ¾ C of a combo of raisins, nuts, or chocolate chips at this point.

Spray muffin tins (makes 2 dozen) and put about ¼ C of mixture into each muffin tin.

Bake at 400 degrees for 20 minutes.
